Vinaigrette Provencal

HUNGARIAN GOULASCH this recipe from Monique C. Berwyn

Ingredients:

2 pounds of stewing beef
1 pound chopped onions
1   4 ounce can of tomato sauce or 1 large fresh tomato
1 to 2 or 3 cloves of garlic
1 Tablespoon Paprika (Hungarian)
1/2 to 1 Teaspoon Cayenne pepper
1/4 Teaspoon Black Pepper
1/2 Teaspoon Marjoram
some minced lemon rind
salt to taste, but not too little...
oil for frying.

Directions:

Cook onion in oil till golden, do not burn, they will not disintegrate during the cooking process. Add spices, stir and quickly add some water before the Paprika burns. (This causes a bitter taste) add tomatoes or sauce and the beef. Add 1/2 cup of water and simmer slowly until meat is tender, adding water as necessary to obtain sauce.
